If you don’t do gaming or 4K video editing on your phone, there’s no problem. The CPU will even be fine for Instagram face filters for the foreseeable future
Samsung is using by far the worst OEM Rom, Pixel has by far the best. Go for the Pixel
If you own a Windows 10/11 Pro version, you can set a group policy for control of updates. If you own a Home edition, you need to change a Registry entry. It’s not hard, but just as you I like Auto update more because I tend to forget to manually update

I don’t get why people always want the latest and greatest processing power in their smartphones, when all they do is text and take pictures with it

I use it 95% of the time as a watch, notification reader and fitness tracker only, where a Mi Smart Band would be totally fine for the same functionality, but 5% of the time I use the WearOS functionality which is a great benefit

For the future: it’s a lot easier to help you with layout things, if you specify which card you are using. Here you are using Mushroom cards, which not everyone has installed on their HA instance :)

I don’t want to set a misunderstanding: this does not solve the state on reboot issue, maybe “flawlessly” is not the correct word. On a reboot, all automations are always stopped, so that does not help here.
